Surya’s Special Mother’s Day Recipe: Matcha Cashew Chia Pudding

Chia pudding is one of my favorite quick snacks and a healthy way to support our overall vitality and help us to celebrate the seasons with seasonal fruits, nuts and creating our own custom flavors.

Chia seeds offer a range of health benefits due to their high content of fiber, omega-3 fatty acids, and antioxidants. They can improve our digestive health, support heart health, regulate our blood sugar levels, reduce inflammation, and support bone health.


Ingredients:

  • 4 Tablespoons Organic Chia Seeds
  • 1 cup Organic Cashew Milk
  • 2 Teaspoons Matcha Green Tea powder
  • 1 ½ Tablespoons Maple Syrup
  • 1 teaspoon vanilla

Toppings:

  • Coconut Chips (lightly salted), Cacao Nibs, Drizzled honey, Shaved frozen raspberry or Fresh Strawberries.

Put the cashew milk on low heat for a few minutes while adding the matcha tea powder for assimilation and flavor. 

Pour into a medium bowl, add the chia seeds, and whisk thoroughly, making sure you remove all lumps within the mixture. Let it sit for a few minutes and whisk again.

Spoon mixture into small mason jars leaving enough space at the top for the added toppings once it thickens. Refrigerate for 30 minutes longer to allow Chia seeds to thicken into a spoonable pudding.

To serve, top as desired with cacao nibs, coconut flakes, and berries to add that fresh livening flavor. I always love a drizzle of raw honey on top for the added sweetness.
