Dark Chocolate Mint Meltaways
The combination of healthy fats in this decadent, but healthy treat – the cocoa butter in the chocolate and the coconut oil – creates a lower melting point creating that luxurious “meltaway” sensation by the time they make it into your mouth. The crispness of the peppermint is the perfect compliment to the richness of the chocolate. Personally I love adding a bit of texture, which is where the nibs come into play – adding crunch, but also more of the nutritional benefits of the pure cacao.
Dark Chocolate Mint Meltaways
(makes about 60 pieces)
Ingredients:
12 oz. good quality dark (70% or higher) chocolate, chopped
1/2 tsp. salt
1/2 cup coconut oil (warmed slightly so it’s soft not hard/cold)
1/2 tsp. mint extract or oil (to taste)
Optional: cacao nibs
Instructions:
1. Line the bottom of an 8″x8″ baking pan with wax paper and set aside.
2. Melt the chocolate in a bowl set over a pot of simmering water. Add the salt and stir for about a minute.
3. Add the coconut oil to the warm chocolate and stir to combine.
4. Add the peppermint oil or extract and stir to combine; it will take 2-3 minutes if the extract is alcohol-based, only a few stirs if it’s oil-based.
5. Pour into the prepared pan. If you’d like to, sprinkle a few cacao nibs into the mix to add a bit of crunch to the silkiness.
6. Allow to set until firm, at least 3 hours.
7. Cut into 1/2″ squares. Store refrigerated in an airtight container until ready to eat. Eat within two weeks (unlikely to be a problem!)
